The Pastry Arts program seeks to produce well-rounded graduates that can pursue entry level opportunities as Assistant Pastry Chefs, Assistant Bakers and Pastry Cooks. Basics of fundamental management concepts and food safety as well as hands-on experience in decorating skills, classical pastries and the basics of chocolate and sugar are included. Graduates of the Pastry Arts program will receive a strong foundation of fundamental pastry techniques to begin working in the industry as professional kitchen staff and food service personnel. Bake shop organization and professionalism are emphasized through the 10 week externship opportunities that apply the skills learned in a professional setting.

Program Objectives


Upon graduation, students will be able to:

  1. Promote respect and passion for the hospitality profession as well as pride and ethical behavior for an industry based in customer service.
  2. Apply fundamental principles of baking and dessert presentation to a wide variety of Baking and Pastry disciplines.
  3. Comprehend the fundamentals of flavor profiles and apply to the creation of classic and modern desserts and pastries.
  4. Integrate food safety, cost controls and nutritional concepts in a professional food service operation.
